Pig trotter 1kg 2. Radish 500g, peel and cut smaller 3. Dried cuttlefish 1pc, cut smaller 4. Dried chilli 8pcs, cut smaller to remove seeds. 5. Ginger slices, few pcs Seasoning 1. Preserved soy beans 2tsp 2. Dark soya sauce little 3. Light soya sauce 3tbsp 4. Oyster sauce 1tbsp 5. Salt 1 tsp 6. Rock sugar 50g Method 1. Place the pig trotter in a wok of cold water with some ginger slices. Bring to boil for 1min, then rinse it with water. Set aside 2. Heat wok with oil, add in ginger slices and stir fry to aromatic. Then add in dried cuttlefish and dried chilli. Stir fry till aromatic. Add in pig trotters and mix well. 3. Add preserved soy beans and dark soya sauce and mix till trotters are well coated with dark colours and aromatic. Then add water enough to cover the trotters. Bring to boil. Add in oyster sauce, light soya sauce, salt and rock sugar. Let it boil for 2-3min before transfer to another pot and add in radish. 4. Bring to boil and then turn to low heat and simmer for 45min. Lastly turn to high heat and cook for another 10min to thicken the gravy. 5.
